As part of a recent Restaurant Eats Out food tour, we checked out some of London’s most exciting taco purveyors, including Wahaca, Breddos, El Pastor, and Temper.

In the second of our Behind The Scenes series – quick interviews with the faces behind the businesses ‒ we chatted to Sam Hart, of The Hart Group (also owner, with brother Eddie, of clubs and restaurants Quo Vadis, Barrafina) and co-owner of Mexican taco joint El Pastor.

He talks classic Mexican tortillas, the “nixtamalisation” making process, increased interest in authentic Mexican food, and the cuisine’s ‘next big thing’
