#SiNxSambalShiok: Sambal Shiok popping up at Salvation in Noodles
Malaysian street-food kitchen, Sambal Shiok, is to pop-up at Salvation in Noodles (SiN), London, and take over the kitchen for a fortnight in January.

SiN founder, Colin Tu, will give Sambal Shiok’s Mandy Yin and her team full use of the premises from Saturday 2 January to Sunday 17 January, in a move to give both businesses and guests a ‘taste of something new’.

The project, which is being dubbed as #SiNxSambalShiok, will allow the popular pop-up to experience running in a building for the first time since it opened at Street Food Union, Street Feat, and a six Saturdays-long residency at Newman Arms.

SiN’s original site in Dalston will remain open for business, but as a thank-you to staff for their hard work, any member of its team who wants an extended holiday in this period will be allowed to take it.

Tu said: “It’s unusual for a restaurant to let anyone take over completely, especially for as long as two weeks, but Mandy is an old friend and I know that #SiNxSambalShiok will be a smash. Mandy and her guys get to experience what it’s like to run a restaurant, while those of my team who want to can take a good long break. It’s win-win for both of us, and our customers.”

Benefits of using the Finsbury Park premises for Sambal Shiok include being able to serve a wider range of dishes than before. On the menu will be Curry Laksa, Nasi Lemak, Beef Rendang, Satay and Potsticker Dumplings, along with a range of vegetarian and gluten-free options.
