Manchester’s 271-bedroom The Palace Hotel has appointed Steven Wilson as new executive chef (whose experience includes Ferran Adria and Raymond Blanc); Paul Speakman as new banqueting head chef (who has worked with chefs including Simon Rimmer) and Alex Worrall as the Refuge restaurant head chef (whose experience includes Tetsuya Wakuda in Sydney, and working with Marco Pierre White).
